You need to start reading at least a few planted aquarium books, no shortcuts here as it's best to get an organised idea about the whole process before you start. This forum & other on-line sources can help if you're not clear on certain things but detailed explanations are beyond the scope of usual answers.
If you're really serious, good idea to buy a good plant identification book with photos & tips on how to plant & maintain each plant, water parameters, amount of light needed etc. Basically, the most important factors for good plant growth are light, CO2 & fertilisation; too much or too little of each causes problems like dying plants or excessive algae. A good book should also discuss potential plant problems & diseases and how to resolve.
For a large tank like yours, you may find that using Excel alone is insufficient & have to invest in CO2 tanks but give Excel a good try first. Also be patient as plants take some time to settle down initially, don't be alarmed at early signs of dying leaves as long as the whole plant is still ok. With such strong lighting, red plants (which need more light) should be fine but hence the need to balance lighting with enough CO2. Or else you'll be fighting a major war with algae.
Besides getting down to research, start having an idea how you want to aquascape & what kind of plants you want, then research on the plants' compatibility. Decide whether you want a plant only or mixed tank. Find out which fish are no-nos in planted tanks, good ones are those that help eat algae like oto midget catfish, true Siamese algae eaters, borneo suckers & freshwater shrimps. Best is a combination as no single creature eats all types of algae. Some are not so ideal eg. snails create population nightmares & also eat plants, plecos actually don't eat that much algae & poop too much, Chinese algae eaters become too aggressive & start preferring fish food.
Have fun as a good planted tank looks great though the initial setup can be tiring. For inspiration, look at Takashi Amano's masterpieces which have created a tsunami of interest in planted tanks.
